Roasted Bell Pepper and
Cream Cheese Chicken Pasta

[Serves 4 to 6 persons]

  • 1 Red Bell Pepper Roasted
  • 2 Garlic Pods Minced
  • 4 oz Cream Cheese
  • 6 oz Whole Milk
  • 1/2 Onion
  • 1 SuperChick Chicken Breast
  • 1 tsp Thyme Chopped
  • 1 tbsp Basil Freshly Chopped
  • 12 oz Pasta
  1. Coat red bell pepper with oil, salt and pepper and place into oven
  2. on high heat for 20 minutes until roasted
  3. In a medium pot with boiling salted water add pasta, stir and cook until al dente
  4. Remove pepper from oven, and gently remove
  5. outer skin and seeds
  6. Place pepper into blender with milk and blend until pepper is broken down
  1. Cut SuperChick chicken breast into small pieces
  2. In a small saucepan on medium heat, saute onions, garlic, herbs and chicken for 2 minutes
  3. Add blended mixture of milk and roasted pepper then bring to a light boil
  4. Slowly whisk cream cheese into mixture
  5. Adjust seasoning of sauce with salt and pepper
  6. Add pasta, and mix in well.
Homemade Mini Chicken Burger with
Grilled Pineapple and Mango Aioli
[Serves 4 persons]
  • 1 SuperChick Chicken Breast (Boneless)
  • 1/2 Onion Diced Fine
  • 1 tsp Fresh Marjoram Chopped
  • 1 tsp Fresh Thyme Chopped
  • 1 tsp Orange Zest
  • 1 tsp Cumin
  • 1 Garlic Pod Minced
  • 4 oz Breadcrumbs

SuperChick Chicken Burger

  1. Cut chicken into large pieces and place into food processor, pulse it until chicken is broken down to an almost smooth texture
  2. Mix in all other ingredients to the processed chicken, mixture should be tight enough to shape into burgers
  3. Shape mixture into mini patties and dust them with breadcrumbs
  4. Coat bottom of frying pan with oil, when heated, fry burgers on each side for 4 minutes on medium heat
Mango Aioli
  • 1 Mango Peeled And Sliced
  • 1/2 Onion
  • 1 Garlic Pod
  • 2 oz Chopped Coriander
  • 1/2 Lemon
  • 6 oz Mayo
Mango Aioli
  1. Add mango, garlic and onion to blender and blend until smooth
  2. Pour mixture into mayonnaise, add chopped coriander and mix together well
  3. Season with salt and pepper and place to chill
