Roasted Bell Pepper and Cream Cheese Chicken Pasta
Ingredients
- 1 Red Bell Pepper Roasted
- 2 Garlic Pods Minced
- 4 oz Cream Cheese
- 6 oz Whole Milk
- 1/2 Onion
- 1 SuperChick Chicken Breast
- 1 tsp Thyme Chopped
- 1 tbsp Basil Freshly Chopped
- 12 oz Pasta
Method
- Coat red bell pepper with oil, salt and pepper and place into oven
on high heat for 20 minutes until roasted
- In a medium pot with boiling salted water add pasta, stir and cook
until al dente
- Remove pepper from oven, and gently remove
outer skin and seeds
- Place pepper into blender with milk and blend until pepper is broken down
Sauce
- Cut SuperChick chicken breast into small pieces
- In a small saucepan on medium heat, saute onions, garlic, herbs and chicken for 2 minutes
- Add blended mixture of milk and roasted pepper then bring to a light boil
- Slowly whisk cream cheese into mixture
- Adjust seasoning of sauce with salt and pepper
- Add pasta, and mix in well.
Homemade Mini Chicken Burger with
Grilled Pineapple and Mango Aioli
[Serves 4 persons]
Ingredients
- 1 SuperChick Chicken Breast (Boneless)
- 1/2 Onion Diced Fine
- 1 tsp Fresh Marjoram Chopped
- 1 tsp Fresh Thyme Chopped
- 1 tsp Orange Zest
- 1 tsp Cumin
- 1 Garlic Pod Minced
- 4 oz Breadcrumbs
Method
SuperChick Chicken Burger
- Cut chicken into large pieces and place into food processor, pulse it until chicken is broken down to an almost smooth texture
- Mix in all other ingredients to the processed chicken, mixture should be tight enough to shape into burgers
- Shape mixture into mini patties and dust them with breadcrumbs
- Coat bottom of frying pan with oil, when heated, fry burgers on each side for 4 minutes on medium heat
Mango Aioli
- 1 Mango Peeled And Sliced
- 1/2 Onion
- 1 Garlic Pod
- 2 oz Chopped Coriander
- 1/2 Lemon
- 6 oz Mayo
Mango Aioli
- Add mango, garlic and onion to blender and blend until smooth
- Pour mixture into mayonnaise, add chopped coriander and mix together well
- Season with salt and pepper and place to chill
